Ingredients

  • 1–2 organic, cage-free or pasture-raised eggs (prepared to taste)

  • 2–4 turkey sausage links

  • 1/2 c cooked sweet potatoes, cubed

  • 2 c greens

  • 1/2 red pepper, chopped

  • 1/4 c red onion, chopped

  • 1/4 avocado, sliced

  • 2 tbsp coconut oil or extra virgin olive oil

  • Salt and pepper to taste

  • Optional: 1-2 tbsp hot sauce

Instructions

  • Heat a medium-to-large pan on the stove with 1 tbsp coconut oil or extra virgin olive oil (I prefer coconut oil as it heats well and adds a little sweetness to the sweet potatoes).
  • Sautè the cubed sweet potatoes over medium-high heat until they are golden around the edges (about 10 minutes). Season your sweet potatoes however you like – with salt, black pepper, garlic powder or a teaspoon cinnamon.
  • Set the sweet potatoes aside or continue to cook, depending on your preference. In the same pan, cook your turkey sausage according to the package instructions.
  • Once the turkey sausage is browned, add the red pepper, red onion and greens to your pan. Sautè for 2-3 minutes.
  • Fry 1-2 eggs on the stove. I like to cook my eggs in about 1 tbsp of coconut oil, and I cook to over easy. You can prepare your egg(s) to your personal preference, or use hard boiled eggs if you’ve prepped the other ingredients ahead of time.
